Tambdi Bhaji | Red Amaranth Recipe | Lal Saag Sabji

Red amaranth gets easily in Konkan everywhere. Red amaranth is a known as tambdi bhaji, the “Tambdi” means red, “Bhaji” means vegetable.
In this recipe no oil is using, it is a healthy recipe and a nutrient-rich quick and easy recipe. This recipe commonly made in the Konkan region. This tambdi bhaji served as a side dish with dal and rice.

Ingredients:
 2 Bunch Red Amaranth (Tambdi Bhaji)
 1 qt Onion
 4 qts Green Chilli
 3 tbsp Grated Coconut
 1 tsp Salt
 ½ cup water

Instructions:

Firstly cut the root. do not use the hard or dense stems. collect the tender small stem and leaves in the large bowl.

Now add water in the bowl and let the red amaranth leaves be immersed in the water for 2 to 3 minutes. doing this helps to get rid of the mud or dust on the leaves as these settle down in the water.

Now drain all the water very well from the leaves. chop the leaves.

Meanwhile, grated coconut, chopped onion, slit chillies. keep aside.

Place kadai on the flame, add red amaranth leaves, chopped onion, slits chillies into the kadai,

Add salt, mix well.

Add 1/2 cup of water and cook on a medium flame till the moisture evaporates, stirring once in between.

Add grated coconut mix well. Serve hot.
