Ingredients:
 2 Bunch Green AmaranthLeaves
 1 tbsp Oil
 1 qt onion
 3 qts green chilli
 3 tbsp grated coconut
 1 tbsp Salt
 ½ cup water

Instructions:

Collect the tender small stem and leaves in the large bowl. Do not use the hard or dense stems.

Now add water in the bowl and let the Green Amaranth leaves be immersed in the water for 2 to 3 minutes. doing this helps to get rid of the mud or dust on the leaves as these settle down in the water.

Now drain all the water very well from the leaves. chop the leaves.

Meanwhile, grate the coconut, chop onion and slit chillies. keep aside.

Place kadai on the flame, add chopped onion, slit chillies into the kadai, saute for 2 minutes.

Then add Amaranth leaves and 1 tbsp salt, mix well.

Add 1/2 cup of water and cook on a medium flame till the moisture evaporates, stirring once in between.
