Anda Biryani | How to make authentic anda dum biryani

This is an authentic anda biryani recipe. This is not an Instant biryani recipe. Slow cooking is involved in letting the flavours come out properly.
This is for a weeknight meal if you follow the traditional method.

Ingredients:
For Spiced egg:
 8 qts Egg
 1 tsp Salt
 1 tsp Turmeric Powder
 1 tsp Chilli powder
 2 tsp Oil
For Boil rice:
 700 g Basmati rice
 ½ cup Coriander and Mint Leaves
 1 tsp Salt
 1 tbsp Ghee or oil
 3 Green Cardamom (Choti Hari Ilaichi)
 3 to 4 cups Water
For gravy:
 4 Medium Onions slice (fried)
 1 Medium Tomato
 1 tsp Turmeric powder
 1 tbsp Chilli Powder
 ½ tsp Cumin Powder
 1 tsp Salt
 ½ cup Curd
 2 tsp Coriander powder
 1 tbsp Biryani Masala
 ½ cup Mint leaves ( Pudina)
 ½ cup Coriander leaves
 2 tbsp Ginger garlic paste
Dry Spices:
 4 Bay Leaf
 1 tsp Cumin
 1 ½ Star anise (chakra phool)
 1 tsp Shahi jeera
 1 ½ Mace (Javitri)
 2 Black Cardamom (Badi Ilaichi)
 4 Green Cardamom (Choti Hari Ilaichi)
 2 Cinnamon stick (Dalchini)
 10 Cloves
 1 tbsp Dagad phool (Black Stone Flower Or Pathar Phool)
 1 tsp Dried Fenugreek leaves (Kasuri methi)
 10 Black pepper

Instructions:
1

Boil egg and shell all eggs.

Heat oil in the pan and deep fry onions till golden brown. and keep aside.

Keep all the ingredients ready.

Take the same pan which we fry the onions, in that add 1 tsp turmeric, 1 tsp chill powder and 1 tsp salt, stir well.

Add boiled egg in the pan and fry for 2 minutes. keep aside

Add tomatoes and ginger garlic paste in same pan stir continuously.

Add all spices in the gravy. and stir well saute for a minute.

Add turmeric, chilli powder, cumin powder, Coriander powder and salt. mix well. saute for a minute.

Add fried onions and stir well.

Add curd and stir continuously.

Season with salt. Check gravy thickens and add some water if necessary.

Add Mint leaves and coriander leaves. stir well

Add Boiled fried eggs and mix well in gravy and cook for 2 minutes in low flames.

Bring 4 to 5 cups of water to a boil and cook rice along with 1 tsp ghee or oil, green cardamom, shahi jeera, Mint leaves and coriander leaves.
cook till rice is 80% done, drain water. Do not overcook the rice for biryani.

For Dum biryani you have to Take a thick pan and add gravy masala in the bottom, add fried onions and mint and coriander leaves on top.

Then add half cook rice and make layers of masala and rice.

On top layer add eggs, fried onions, mint leaves, coriander leaves, 2 tsp ghee and Kesar water. then cover the pan with a tight lid or an aluminium foil. Dum the biryani on low flame for 10 minutes.

Garnish with mint and coriander leaves. Serve hot with raita or salad.
